Balsamic Vinaigrette

My favorite recipe uses Balsamic vinegar and olive oil to make balsamic vinaigrette.

Within minutes you can have home made vinaigrette as easily as mixing balsamic vinegar with olive oil or as complex as you want to make it. It will be healthy as well as very tasty.

The key ingredient, balsamic vinegar, adds a very distinct mellow sweetness to your salad dressing. Combined with olive oil you will find you have a very enjoyable vinaigrette at a very reasonable price.

This dressing does more than zest to a salad. Try it with lobster, scallops, asparagus, artichokes, steamed vegetables, greens and fresh sliced tomatoes.

Here are a couple recipe suggestions to start you off. If you don’t have all the ingredients you could simply mix the balsamic vinegar with the olive oil or play with them to create your own special recipe. Let us know what worked for you.

  • 1/4 cup of balsamic vinegar
  • 3/4 cups olive oil
  • salt and pepper to taste
  • 2 teaspoons of Dijon mustard

You may wish to add some other herbs and spices to enhance the flavor. Chives and sage or a bit of finely grated fresh ginger root will add some zest.

  • 1/4 cup of balsamic vinegar
  • 1 tablespoon of lemon vinegar
  • 3/4 cup olive oil
  • 1/4 cup chopped flat-leaf parsley
  • 1/2 teaspoon salt
  • 1 clove garlic, minced (optional)
  • Cracked black pepper to taste

1. Combine balsamic and lemon vinegar in a small bowl. Drizzle in the oil and whisk. Add the remaining ingredients.

2. Serve immediately or refrigerate.

Since balsamic vinegar has such a rich flavor while olive oil is so delicate, you may want to increase the proportions to one part vinegar and four to five parts olive oil.
